Asian Beef and Noodles

It was a good day.

I went to work, got a lot done, had a fabulous salad for lunch, drank loads of water, and dragged my sorry self to the gym for 45 minutes on the elliptical.

Next week I'm going to write a blog about my adventures at the gym, and subsequent bursts of crazy competition when someone gets onto a machine next to me.

Let's just say this gal got juice and leave it at that for now.

In the meantime, I was incredibly hungry when I got home and threw together a recipe our whole family really likes for Asian style beef and noodles.

It's actually a much more simple dish than what I usually make but somehow the flavours are all so clean that you feel really healthy when you have this.

At least I do.

Give it a try for a quick week night dinner. It packs a nice punch of fibre, protein, and veggies that is realy quite magical!

Asian Beef and Noodles

3 green onions
2 cups sugar snap peas, trimmed
1 sweet red pepper, one sweet yellow pepper, cut into chunks
2 Tbsp hoisin sauce
2 tsp EACH rice vinegar, minced fresh gingeroot and garlic
1 lb sirloin grilling steak 3/4 inch thick
1/2 tsp Chinese five spice powder
Sesame Noodles (recipe follows)
1/2 cup unsalted roasted peanuts

Slice green onion tops, set aside. Cut remaining onion sections into 2 inch lengths; toss together with peas, peppers, hoisin sauce, vinegar, ginger root and garlic on a large foil lined baking sheet.

Rub beef all over with Chinese five spice powder. Grill over medium high heat for 3-4 minutes per side. Cover with foil, let rest for 10 minutes, before thinly slicing.

Meanwhile, broil vegetable for 5-8 minutesuntil lightly charred. To serve, mound sesame noodles on plates. Top with broiled vegetables, beef slices, and more hoisin sauce to taste if desired. Sprinkle with peanuts.

Sesame Noodles

Cook one package of whole wheat spaghetti until al dente. Drain and toss with the reserved green onion tops, 1 tsp sesame oil, and 1/2 tsp red pepper flakes.

This is one of my very favorite meals and you presented it well as always. I like it with brown rice and x-tra ginger. Supper YUMMY- and beautiful
