My Favourite Meatloaf Recipe

I have tried many recipes for meatloaf over the years and I have to tell you, this one is the best! It is moist, flavourful and oh so good.

Don't be afraid of the dill pickle. It is amazing in this dish.

Dilly Meatloaf



Ingredients:

* 1 1/2 pounds lean ground beef
* 3/4 cup quick cooking rolled oats
* 2 large eggs, slightly beaten
* 1/4 cup finely minced dill pickle
* 1/4 cup finely chopped onion
* 1 teaspoons salt
* 1 cup tomato juice

Preparation:
Combine all ingredients, blending gently but thoroughly with hands. Pack mixture into a loaf pan.

Can be wrapped and frozen at this point.

Thaw completely, brush top with 1/2 cup of ketchup, and bake at 350° for 1 hour and 10 minutes.

Let stand ten minutes before slicing.

Dilly meatloaf serves 6 to 8.

This recipe freezes beautifully.

Hmmmm... someone else posted a meatloaf with a pickle. I'm scared..LOL lOOKS GOOD!
